Vegetarian Enchiladas

Flour tortilla enchiladas prepared with fresh salsa verde, roasted sweet peppers, onions, mushrooms, zucchini, summer squash, black beans, cheddar and Monterey jack, then finished with a garlicky sour cream white sauce, and pico de gallo.
